Pot Luck!

May 19 2017

Something off-topic but fun to discuss! When you are invited to a Pot Luck, what is your favourite go-to food? Which of your Pot Luck dishes have received rave reviews? Do you only share the recipes or do you keep it a "trade secret" when asked by appreciative partygoers?

My red curry. Basic recipe but was taught in Asia how to influence the flavour as your cook it. In a wok only, reheats very well. Fresh lime juice is much better than bottled stuff too.

I love making sweet and savoury scrolls using those sheets of puff pastry with flavours like ham and cheese through to cinnamon sugar... mouth watering. Always goes down well. My favourite prepared by someone else is so simple, mountain bread wrapped around chopped, boiled eggs with snow pea sprouts and cut into sushi size pieces. Peachy

I make a pretty mean Butter Chicken. I'd go with that or some similar wet dish because they travel best. And only improve with time. I don't mind sharing my methods at all...it's not a competition, after all, and it's part of the social fun.

always gets rave reviews Easy Chicken Recipe Here is a chicken recipe that also includes the use of popcorn as a stuffing -- imagine that. When I found this recipe I thought it was perfect for people like me who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try. 2 kg Chicken, 1 cup melted butter, 1 cup stuffing, 1 cup uncooked popcorn, Salt/pepper to taste. Preheat oven to 350 degrees. Brush chicken well with melted butter salt, and pepper. Fill cavity with stuffing mixed with popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds. When the chicken's ass blows the oven door open and the chicken flies across the room and lands on the table, it's done and ready to eat! And you thought I couldn't cook 🍗 😋

PeachyPearl, since you mentioned potato salad, have you ever tried the Japanese version? It's kinda different and very yummy too! What about you, mischievous me? Ever tasted the Japanese one? I love the Potato Salad with Bacon and Egg at Woolworth's. I sprinkle some Japanese garnishing on top and sometimes add some finely sliced spring onions, if I have it in my fridge. I also often sprinkle chia seeds, mixed unsalted nuts and sometimes, goji berries. Pistachios, pepitas, pumpkin seeds, raisins and cranberries go very well with potato salad, I've discovered! My friends and colleagues often say I'm weird, eating my potato salad that way. Sadly, I often end up throwing most of it. My eyes have an appetite larger than my tummy's!

Thanks for pointing it out. I keep forgetting that "Pot Luck" is a term not commonly used in Australia. It's apparently a 16th century English word and was originally used to mean, "food provided for an unexpected or uninvited guest, the luck of the pot." During the Great Depression, the meaning changed to, "communal meal, where guests bring their own food". In the modern day context, yeah... "bring a plate to share". Interesting!

PurePeony, nope, can't say I've ever tried Japanese potato salad. I do love the topping on the salad that comes with bento boxes though. And funny, your additions sound tasty to me, the sort of thing that could be offered on the side for people to add themselves too. I've been tossing up on the idea of a thread of foods people like and dislike, lol. Stuff for eg: like kidneys, and spinach (yum) and peel on potato in salads (yuck). I've had a troubled relationship with food over the years and minimal stress as well as attentive care this year has expanded what had become a limited menu selection. So, I'm in happy land, with the figure to prove it! I need more of the 'food and sex' selection! Peachy

But it sounds feasible. Though, I don't believe that popping corn could explode a roast chicken....surely. Im thinking of the the chicken juices soaking into the Popcorn...like with stuffing. But realistically, the corn probably wouldn't pop. A popcorn maker is a hot, dry environment...unlike the hot and wetinnards of a chicken.Food for thought. #KoolgreyFoodTechnician

We need Mythbusters, stat! I did think it was interesting, and was totally sucked in, lol. But agree that, in reality, it likely wouldn't pop anyway, though of course I will do a bit of a google for fun. Ohhh, yeah, it's the sudden build up of heat that causes the explosion, so not likely but I do wonder about making a stuffing with popped corn? It could be sweet or savoury... Back on topic... A couple of weeks ago, we made popcorn in a pot with a glass lid, on the stove with the young 'un for all of our first sight of corn popping, lol. aFor something different, we used a sweet oil that we got as a sample for cooking, with loads of icing sugar added after for something different. Do add a bit of salt during cooking for zing. It can be handed out in paper bags. Peachy

When I make a fried rice, and I use corn kernels in it, I do it on a very hot plate...like a bbq grill plate. Once the corn heats up on the metal, it starts popping and exploding....the moisture in them expanding, I suppose...and hot kernels are flying everywhere. Copped the occasional burn in the face..

Eh... were you cooking, or were you conducting a science experiment? I've tried popcorn in a variety of flavours, but I still prefer the sweet flavourings. Kettle Chips has a new popcorn line and I really love the Honey and Butter flavoured one! Maybe I'm strange but I don't like salty popcorn, nor potato chips with salt and vinegar.

...naked cooking would have its hazards.....hot oil, spattering liquids, bits of flying corn, steam. It'd be like using an angle grinder or drilling masonry with no clothes on....or just a tool belt.Sounds exotic an sexy, but in practice......ouch! So I imagine..

That you don't like salty flavours was the exact sort of thing I was thinking about for that thread I mentioned PurePeony. I LOVE salty popcorn and salt and vinegar chips (I'm fussy about brands though). I've been meaning to try the new Kettle popcorn, Honey and Butter sounds perfect to me, thanks for the tip. Peachy

For some reason, I had visions of popcorn in your fried rice and only realised just this moment that you were talking about corn kernels! Brilliant. We tried cooking fresh corn kernels over high dry heat recently, and got the pan of jumping corn. Y U M M Y. We ordered food for the first time from an Asian Fusion food place that home delivers the other night (yeah, sometimes we're lazy as) and were so disappointed with what looked like bagged frozen veg as our selection of veg. Cubed carrots, corn and peas. It sounds a bit like we should all be wearing safety gear when we cook! Especially you, naked, and with that chicken, Touch!

I hate the American term, but Candied Bacon. Sort-of-caramel coated bacon strips. Takes an age to prepare and cook but the results are well worth it. One of those dishes where you have to stop yourself eating the lot as it comes out of the oven. Regular Quality Assurance testing is impossible to resist however, I make about half again of what I intend to take for QA purposes. Makes a great finger food - done right it's like jerky strips but of course with a sweet coating, easy to eat. A whole heap of us had a bacon night years ago, which is where I learnt the recipe. Another memorable one from that night was chocolate-covered bacon. Cook, smother or drizzle with chocolate sauce. You wouldn't think it would work, but it absolutely does.
