In most speed dating (men and women) let's say there are 10 men and 10 women. The women all have a table each, and stay there. The men rotate around the room, having 5 to 7 minutes of time at each table. In that time of conversation, you chat about whatever you think is appropriate. Every person has a match card and indicate on it after each "date", whether they would like to see that person again. If, at the end of the night, a female and male have mutually "matched" with each other (both have indicated they like the other person), then the organiser informs them of this and shares contact details. (Essentially a more in depth form of Tinder). I never managed a mutual match in my attempts but perhaps it might be different in this type of community :) Regardless, you also have mingling time in a middle break and afterwards. Speed dating with swingers could work but you have to work out whether it's couples meeting couples, men, women etc. It's easy when it's just 50/50 split of two types. Also, in regular speed dating, the men and women aren't necessarily interested in each other... When I did have a singles meet here, it ended up as a group circle discussion/chat with everyone introducing to everyone else a few things about themselves (among the regular mingling). So maybe something more tailor made to a widely mixed group, that enables interaction between all at least for a moment. There are also mingling games that do a similar thing.
